best cookie recipe EVER!

Cookies make me happy.  Not as happy as ice cream, but they come awfully close…plus it is harder to make ice cream at home.  So with that said, and after 2+ weeks of insanity…here is one of my favorite cookie recipes of all time.  I call them Everything Cookies, because you can literally put just about anything or everything in them.  The best part is playing with the ingredients…add whatever you want, it always is incredible!  This time I am just doing it with chocolate chips…sometimes the beauty (and deliciousness) is in keeping it simple, this is one of those times.

Chocolate Chip Cookies

Everything Cookie Recipe – best EVER!

1/2 cup rolled oats
2-1/4 cups all-purpose flour
1-1/2 tsp. baking soda
1 tsp. salt
1/4 tsp. nutmeg
1/8 tsp. cinnamon
1 cup butter, softened
3/4 cup brown sugar, packed
3/4 cup granulated sugar
1-1/2 tsp. vanilla
1/2 tsp. lemon juice
2 eggs
3 cups semi-sweet, chocolate chips (or substitute dark chocolate chips or white chocolate chunks…I also sometimes reduce chocolate chips to 2 cups, then add 1 1/2 cups of M&M’s in the seasons best color or even Cadbury Mini Eggs around Easter!)
1-1/2 cups chopped walnuts (optional, or substitute hazelnuts, Macadamia nuts, etc)
Combine the ground oats with the flour, baking soda, salt, nutmeg and cinnamon in a medium bowl.
Cream together the butter, sugars, vanilla, and lemon juice in another medium bowl with an electric mixer. Add the eggs and mix until smooth. Stir the dry mixture into the wet mixture and blend well. Add the chocolate chips and nuts to the dough and mix by hand until ingredients are well blended.
For the best results, chill the dough overnight in the refrigerator before baking the cookies.
Spoon rounded 1/4 cup portions onto an ungreased cookie sheet. Place the scoops about 2 inches apart. Bake in a 350°F oven for 16-18 minutes or until cookies are light brown and soft in the middle. Store in a sealed container when cool to keep soft.
Just some food for thought, these are the perfect cookies to combine with ice cream…when you are in the mood for both of your favorite things.
