so…after a nice weekend away with the extended family, we are wrapping up a Sunday night with just the two of us, and the most AMAZING dinner ever – ok maybe not ever, but it was pretty darn good! We had Beer Can Chicken, Grilled Corn with Bacon Butter, BBQ Baked Beans and Coleslaw…oh yeah, you read it right, and it was sooo good, yummm!
Here goes, from top to bottom…
Beer Can Chicken – there are a million recipes online for this, so I won’t give you another big, long recipe. But here are a few basics that made it work for us. Get a ~4 LB. chicken, wash it with water (inside & out), pat dry, rub with olive oil and a little salt & pepper, garlic & whatever dry rub you want to use (we used a Jamaican jerk spice mixture-of course!). Then put the bird on top of a beer can (beer should be about half full) and set it on the grill, over indirect heat. So basically, have one side of the grill on med-high heat and on the other side of the grill, place the chicken to cook for about an hour and twenty minutes. It should be perfectly crisp on the outside, and unbelievably juicy & tender on the inside…it is pretty much heaven, and so easy!
Next up was a little coleslaw – the most amazing, coleslaw though with cabbage, lime and cilantro. I found it courtesy of Food Network & Tyler Florence. I added a bit of carrot and 1 TB. of dry jerk seasoning to mimic the seasoning we used on the chicken – so good! Click on the image above for the link to the original recipe.
I also purchased some potato salad and ‘doctored’ up a can of beans. In my family, we doctor up beans with some ketchup, mustard, salt, pepper, garlic, mustard, soy sauce, worcestershire, bacon and brown sugar – so they are pretty darn good too.
But the creme de la creme of the night was the Grilled Corn with Bacon Butter & Cotija Cheese…heaven, that is all I can say! I found the recipe originally on How Sweet It Is – an amazing blog that has some great recipes, but this has to be one of my favorites. You must try it…do I need to say anymore than Bacon + Butter, seriously?!!?
